When spring comes to the desert, prickly pear cactus celebrates and adorns itself with flowers and fruit. The fruit of this cactus are called tunas. Odd name. Very odd, because they actually taste a bit like sweet pink bubble gum. Yum! They are easy to harvest with the proper equipment. I usually take a bucket and kitchen tongs to pull them off of the cactus. Then comes the fun part. Burning off the stickers on an open flame makes for a minor fireworks celebration. Boiling and straining later makes a delicious drink or jam. My painting is a celebration of spring.
